A number of cookery books designed to assist the young housewife of the rapidly increasing middle class were produced in the second half of the nineteenth century in Britain, and some of these gave suggested menus for every day of the year. One of these was Cre-Fydd's Family Fare: The Young Housewife's Daily Assistant, [first] published in 1864. Most middle-class families kept servants, and this book included a menu for the servants' dinner ("the kitchen"). For August 1, the menus were : BREAKFAST -- Cold lamb, Spiced beef, Rolls, Fruit ; DINNER -- Small brill w/ lobster sauce, Cold minced lamb salad, mutton cutlets with macaroni, Annette's Pudding ; KITCHEN -- Cold mutton, salad. In the absence of refrigeration, an efficient system of using up leftover food was essential if waste was to be avoided, and it is clear from books of this type that this was an important part of menu planning. In the words of the suthor: "If the bills of fare be followed in succession, it will be seen that everything is disposed of, as nearly as can be, without being acquainted with the appetites and habits of the consumers."
